Abstract

This study aimed to demonstrate the extent of the difference in the effect of glass and plastic containers on the chemical and physical properties of sunflower oil and the extent of the difference when stored for two months at temperatures of 25°C and 45°C. The results showed that there were significant differences between the results of glass containers and the results of plastic containers in all experimental conditions, as the plastic containers and the storage period caused an increase in the peroxide number, acidity, and saponification number, while the smoking point increased, while the viscosity values were not affected in all conditions, and the relative density decreased in all conditions as well. As for fatty acids, it was noted that the percentage of saturated and unsaturated fatty acids decreased slightly, as the percentage of oleic acid in the blank sample reached 21.40 and 20.42 at 25 and 45 degrees Celsius, respectively, while in the plastic sample it reached 26.3 and 23.75 at 25 and 45 degrees Celsius, respectively, in the first month, and in the plastic sample it reached 20.09 and 18.78 at 25 and 45 degrees Celsius, respectively, in the second month. As for palmitic acid, its percentage in the blank sample was 8.29 and 7.03 at 25 and 45 degrees Celsius, respectively, while in the plastic sample it was 9.55 and 7.24 at 25 and 45 degrees Celsius, respectively, in the first month. It was 9.50 and 5.49 in the plastic sample at 25 and 45 degrees Celsius, respectively, in the second month.
